Just like the name implies, Pineapple Mojito is a tropical twist on the classic mojito. Part Mojito, part Piña Colada, this pineapple mojito is like a magic potion to keep you hanging on all through summer. Refreshing pineapple juice, combined with my easy Simple Syrup recipe, mint, and lime makes this mojito one of the most fragrant and flavorful cocktails I’ve ever created!

- Fresh mint leaves: A key start to the mojito, the mint leaves are muddled to release their essential oils, which infuse the drink with a cool, crisp taste that pairs perfectly with the sweetness of the pineapple and the tanginess of the lime.
- Lime juice: Freshly squeezed lime juice is a must for any mojito. It provides a tart, citrusy kick that balances the sweetness of the other ingredients.
- Simple syrup: Sweetens the mojito without leaving any gritty sugar at the bottom of the glass. It is so easy to make your own with just sugar and water!
- Pineapple juice: Buying pineapple juice is easier to prepare in a pinch, although you could certainly chop and juice the fresh fruit too.
- Coconut rum: You’ll need a good quality coconut rum like Malibu. This tropical twist gives the mojito a smooth, beachy vibe. It also makes to-die-for Coconut Rum Mojitos and Pina Colada Rum Punch.
- Club soda: Brings the fizz to the drink! It dilutes the drink slightly, making it more refreshing and easy to sip. I always keep small bottles of club soda in my fridge so I have fresh soda for cocktails.

- In a highball glass, combine mint leaves, lime juice and the simple syrup. Using a cocktail muddler or the handle of a wooden spoon, muddle those ingredients together.
- Add plenty of ice. Then add pineapple juice, coconut rum, and club soda.
- Stir well and enjoy! Garnish with a pineapple wedge and extra mint sprig

Ingredients
- 6 mint leaves divided evenly between the two glasses
- 3/4 ounces simple syrup
- 3/4 ounce fresh lime juice
- 1 1/2 ounce coconut rum
- 2 ounce pineapple juice
- 2 ounce club soda
Instructions
- In a highball glass, muddle together the mint leaves, simple syrup, and lime juice.
- Add ice.
