How to Make Peach Puree
For this Bellini recipe, you want to use a thick, delicious peach puree instead of something thinner like peach juice. Don’t worry, it is easy to make puree from frozen or fresh peaches depending on what is in season and you have access to. Making the puree can be done the day before and stored in the fridge to cut down on work on the day of your celebration.
Using Fresh Peaches for Peach Puree
If fresh peaches are available, this puree will be amazing! Choose peaches that are ripe but not overripe, soft around the stem, and with smooth skin. Bellini recipes traditionally call for white peaches, but yellow would be delicious as well if that is what you can find.
- Boil water in a saucepan. Use enough water to cover two peaches.
- Make an ice bath. While the water is heating up, add water and ice to a bowl.
- Boil the peaches. Add the whole peaches to the boiling water for 45 seconds and then use a slotted spoon to transfer them to the ice bath.
- Remove the skin. Once the peaches are cool, remove them from the ice bath and peel off the skin.
- Blend until smooth. Cut up the peaches, discard the pit and stem, and add the peach slices to a food processor or blender to puree until smooth.

- Thaw the peaches. Two cups of frozen peaches will be enough for about four Bellinis.
